Chestnut and green olive chicken stew

Such a satisfying and delicate dish at the same time. It is unusual and could be served at Christmas thanks to the chestnuts. It also takes much less than the traditional Xmas turkey too! It is packed with protein and almost no fat, so a very healthy meal on top of it!


4 chicken fillets

20 small green olives or 10 big ones

1 onion, chopped

1 Tbsp thyme or herbes de Provence

4 garlic cloves, finely chopped

2 Tbsp butter

500g cooked chestnuts





  1. Mix chestnuts, garlic, and herbes de Provence.
  2. Melt the butter, pan-fry the onion and add the chicken until golden on one side.
  3. Then add the mixed chesnuts.
  4. Add 1 cup of water. Cover with a lid.
  5. Cook for 30min.
