Stinging nettle pesto

This pesto can be used on pasta or toasted bread. It has a lovely greenish, nutty and spicy taste. It is one of my favorite pesto! Nettles are known to help to flush harmful bacteria from the urinary tract and treat pain and sore muscles, especially related to arthritis.



1 bunch stinging nettles

2 Tbsp vinegar

1 garlic clove

1/3 cup olive oil

1 cup hazelnuts

1/2 lemon

1 pinch of salt



  1. In a large bowl, place the nettles, cover with boiled water and pour vinegar.
  2. Roast the hazelnuts under the grill. Remove the skin and keep the hazelnuts aside.
  3. Peel off the garlic clove.
  4. Place the nettles in a blender, add the hazelnuts, the clove, juice the lemon in, pour the oil. Blend. Season with salt.
