Stinging nettle soup

Such a special green for this very easy soup to make. This is one of my favorite veggie/plant soup as this plant come directly from nature so it is really packed with goodness. If you try this recipe, there is a good chance that it becomes one of your favorites too! INGREDIENTS  (for 4 people)                                               

Preparation: 15 min
Cooking: 20min

  • 5 handful of nettle
  • 3 Tbsp olive oil
  • 1 onion
  • 4 potatoes
  • 15cl crème fraiche (optional)
  • Equipment: 1 chef knife, 1 chopping board, 1 peeler, 1 pot, 1 blender

Method:

  1. Wash under warm water to remove part of the stinging effect.
  2. Chop the onion.
  3. Cut the potatoes in small dices.
  4. Remove the nettle leaves from the stem.
  5. In a pot, pan fry the onion in the oil. Add the potatoes and then the nettle leaves.
  6. Cover with water. Season with salt and pepper.
  7. Cook until the potatoes are tender.
  8. Blend and add the crème fraiche (optional).
  9. Serve immediately.
